We took into account that everyone has different tastes, so we added flexible parameters:

  • 👤 Number of guests: from a cozy dinner for two to a banquet for 100 people.
  • 🍖 Salad type:
    • Classic: with boiled sausage.
    • Meat: with boiled beef (more satisfying option).
    • Chicken: light version (Stolichny).
    • Fish: unusual recipe with canned fish.
  • 🍽️ Serving size: Choose “Generous Portion” if Olivier is the main dish at the table, or “Standard” if there will be many other snacks.

Useful tips on ingredients

🥔 Potatoes and Carrots

It is better to boil vegetables in their skins and peel them when they have cooled down - this way they will retain their shape when slicing and will not turn into puree. The ideal cut is a pea-sized cube.

🥒 Cucumbers

Classic requires pickled (barrel) cucumbers. If using pickled ones, reduce the quantity as they have a stronger taste. It is not recommended to add fresh cucumber if the salad will be stored for more than 3 hours.

🥚 Eggs

Boil the eggs hard (10 minutes after boiling). To make them easier to clean, immediately after cooking, place them in ice water.

🔹 How long does the prepared Olivier salad last?

A salad dressed with mayonnaise lives in the refrigerator for no more than 12 hours (according to SanPiN). If you do not dress the salad immediately, but store the chopped ingredients in containers, shelf life increases to 18-24 hours.

🔹 Which the weight of one serving is taken into account by the calculator?

In the “Standard portion” setting, we add approximately 200–250 grams of ready-made salad per person. This is the optimal amount for holiday table with other snacks.

🔹 Do you need to salt the salad?

Be careful with salt! Mayonnaise, sausage and pickles already contain enough salt. We recommend salting the dish at the very end, after tasting it.
