How many products are needed for Olivier: Accurate calculation of ingredients per company
Are you afraid that there won’t be enough salad for the guests, or vice versa - you’ll have to finish eating for a week?
The main problem when preparing holiday table is to guess the volumes. The classic “by eye” formula often results in an extra can of peas left over or a couple of eggs missing at the most crucial moment.
Use this tool to create anaccurate shopping list. Enter the number of guests (or the desired weight of the salad), and the algorithm will calculate the weight of each ingredient to the nearest gram, maintaining the perfect balance of flavor.
The gold standard of Olivier proportions
The secret of the taste of “that same” salad lies not in the secret ingredients, but in the balance of masses. Our calculator uses the Soviet proportion, proven for decades, which is considered the standard:
- Potatoes to eggs: Almost 1:1 by weight. It's a base that creates richness and texture.
- Meat part:Should make up about 20-25% of the total weight of the salad.
- Cucumbers (Salted/Fresh): About 10-15%. They are responsible for freshness and crunch, but should not overwhelm the taste of the meat.
How much to cook per person?
When planning a feast, use the following standards:
| 🥗 Buffet / Light snack | 150 gper person |
| 🍽️ Full dinner | 200-250 gper person |
| 🎄 New Year's Eve (with reserve) | 300-350 gper person |
Frequently asked questions from the hostess
⏲️ How long is Olivier stored?
A salad dressed with mayonnaise lasts no more than12-24 hours in the refrigerator. If you want to keep it for 2-3 days, chop all the ingredients, but other cucumbers, onions and mayonnaise. Mix them just before serving.
🥚 How to boil eggs so they don't crack?
Eggs need to be removed from the refrigerator in advance so that they warm to room temperature. Boil them in salted water for 8-10 minutes after boiling (hard-boiled), then immediately plunge into ice water for easy cleaning.
🥩 Which is better: sausage or chicken?
The classic Soviet recipe calls for “Doctor’s” sausage. The version with chicken breast (or beef) is called “Stolichny”. The calculator is universal: the weight of the meat component is the same for both options.
